Salt and fleur de sel

The “white gold” of the region, harvested in the salted swamp,  characterizes the Vendée landscapes. Salt, resulting from the evaporation of seawater, is rich in magnesium and trace elements. La mogette, a bean of Vendée

Ce haricot-grain blanc se cultive dans le bas-bocage vendéen. Il est bourré d’actifs apaisants, riche en fibres, calcium, protéines et fer. On déguste la mogette nature, avec une noisette de beurre, ou en accompagnement. Dans les restaurants vendéens, vous la trouverez avec du gigot d’agneau, du canard ou du poisson ; certains servent encore la « grillette de mogette », une sorte de toast aillé, beurré et recouvert de mogettes chaudes !

This white-grain bean is cultivated in the lower bocage of Venddé. It is full of soothing active ingredients, rich in fibre, calcium, protein and iron. You can taste the mogette natural, with a little of butter, or as an accompaniment. In the Venddée restaurants, you will find it with lamb leg, duck or fish; some of them still serve the “grillette de mogette”, a kind of garlic toast, buttered and covered with hot mogettes!

The gâche and the brioches

La gâche est un peu l’ancêtre de la brioche vendéenne, les deux étant préparées pour les fêtes de Pâques, tradition remontant au Moyen Age. Composée d’une mie jaune très onctueuse et d’une croûte bien cuite, la brioche est parfois parfumée (eau de vie, rhum ou fleur d’oranger). A proximité de votre hôtel, aux Sables d’Olonne, la meilleure gâche se déguste à la boulangerie Tisseron (56, rue Félix-Faure).

The gâche, wich means waste in French, is the ancestor of the Vendée brioche, both being prepared for the Easter celebrations, since the Middle Ages. Composed of a very creamy yellow crumb and a well-cooked crust, the brioche is sometimes perfumed (eau de vie, rum or orange blossom). Close to your hotel, in Les Sables d’ Olonne, the best gâche can be tasted at the Tisseron bakery (56, rue Félix-Faure).

The bottereau

This pastry is prepared during Lent and carnival. Theese doughnuts are lozenge-shaped , golden and sprinkled with icing sugar, flavoured with orange blossom or alcohol. In the past time, they were fried in pork fat. Today, there are many variations:  filled with cream or puff pastry.
